Three Cheese Artichoke and Spinach Dip -Recipe

November 12, 2010

Here is my spin on a traditional artichoke and spinach dip recipe. Mine is so cheesy and your vegi haters will love it! And just in time for the holidays… who loves you?!

  • Need:
  • 1 (8 ounce) package cream cheese, softened
  • 1/4 cup mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/2cup shredded Mozzarella cheese
  • 1/2 teaspoon dried basil
  • 1 teaspoon garlic salt
  • 1 teaspoon of pepper
  • 1 (7 ounce) can artichoke hearts, drained and chopped small
  • 1/2 cup frozen chopped spinach, thawed and drained
  • 1/4 cup shredded mozzarella cheese (topping)

Directions

  1. Preheat oven to 350 degrees F .Lightly grease a small baking dish.
  2. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan cheese, 1/2 cup of mozzarella cheese, basil, garlic salt, pepper. Gently stir in chopped artichoke hearts and spinach.
  3. Transfer the mixture to the prepared baking dish. Top with 1/4 cup of mozzarella cheese. Sprinkle top with a little basil. Bake in the preheated oven 25 minutes, until bubbly and lightly browned. Serve hot with crackers, chips, or even some vegies.

Enjoy!
