July 6, 2010
This is another big family favorite of ours and one of the simplest macaroon recipes you’ll find.
Need: 3 cups -flaked coconut lightly packed
2/3 cup sugar
1/3 cups of flour
1/ teaspoon salt
3 egg whites
1/2 teaspoon vanilla
1/4 cup of semisweet chocolate
1 teaspoon of vegetable oil.
1. Preheat Oven to 325 f. Spray large cookie sheet with baking non stick spray. Mix coconut, sugar, flour, and salt in medium mixing bowl. Stir in egg whites and vanilla.
2. Drop tablespoon size of mixture about 2 inches apart onto prepared cookie sheet. Bake 25 minutes or until lightly brown on top. Remove macaroons from cookie sheet unto large serving plate or wax paper.
3. In small bowl add chocolate and vegetable oil. Lightly mix. Microwave for 45-60 minutes. Stir mixture until all the chocolate chips are melted. drizzle melted chocolate back a forth across macaroons. Cool in fridge for 15 minutes.
