Need:
2 cups heavy cream, divided
3/4 cup butter scotch chips
3/4 cup milk chocolate chips
1 regular package of chocolate gram crackers
3/4 cup butter scotch chips
3/4 cup milk chocolate chips
1 regular package of chocolate gram crackers
1/2 cup of sliced almonds
1.In a medium ad 1/4 c. of the cream and the butter scotch chips, heat in microwave for one minute or until chips began to melt. Remove from microwave and stir chip mixture until chips are fully melted. Repeat with the milk chocolate chips and another 1/4 cup of the cream; pour into another bowl. Refrigerate both about 15 minutes until cool.
2. In a medium bowl, with mixer on high speed, beat remaining cream just until stiff. Gently fold half of the whipped cream into butter scotch mixture. Fold remaining whipped cream into the chocolate mixture, Refrigerate milk chocolate whipped cream. (If whipped cream mixtures go flat after adding them to chip mixture just use your hand mixer and beat whipped cream mixture until fluffy again.)
3.Spread each whole chocolate graham (except for two crackers, to used to garnish the top of cake) crackers with about 2-1/2 tablespoons of the butter scotch whipped cream. (The thicker the layers of whipped mixture the more cake like the crackers will become.)
Sandwich together coated crackers to form 2 stacks (5 cookies per stack). Top each stack with 1 plain graham cracker. Arrange stacks, side by side, on a serving plate, long edges touching.
4.Frost with milk chocolate whipped cream. Then top off with sliced almonds and remaining gram crackers by crumbling up a chocolate gram cracker or two and sprinkling on top of cake
Refrigerate 6-8 hours or overnight for cracker to soften into a cake. Enjoy!
