Oatmeal Peach Cobbler -Recipe

September 14, 2011
This is my all time favorite cobbler. It has a hearty taste to it that is just heaven to me. While this makes a wonderful dessert it also makes a great breakfast and taste just as good when its a left over.
Pre heat oven: 350 f.
Need:
1 cups brown sugar
1 cup granulated sugar
1 1/2 cups flour
1 1/2 cup oatmeal
1/2 tsp baking powder
1 cup butter melted
1 tsp. vanilla
1 large egg
1/2 cup of chopped pecans or walnuts
about 10-12 Cups of peaches (or 2 30oz cans of peaches drained)
1 tbs concentrated lemon juice
1/4 cup melted butter
1. Mix sugars, flour, oats, and baking powder in a large bowl. next add egg butter and vanilla. Gently stir chopped nuts in batter. Set aside.
2. Spray bottom of baking dish with non stick spray. Layer bottom of dish with peaches. Sprinkle lemon juice on top of peaches.
3. Spread batter mixture evenly on top of peach layer. Drizzle melted butter on top of the cobbler to finish it off.
4. Bake for 40 minutes. Serve warm or chilled (really great topped off with ice cream. Yum!)
Enjoy!
