This is such a quick and easy meal for the whole family that is great not only any time of the year but is great for lunch or dinner as well. My favorite version of this sandwich is actually sever at a small town restaurant in Torrey Utah called Red Cliffs. But since we moved two years ago I have been on my own and have to make it myself.
(Serves 6)
Need:
five to six large pieces of cubed chicken breast
2 8oz cans of green chillies diced and drained
six Slices swiss cheese
1 tsp olive oil
1 tsp Blackening seasoning (or seasoned salt)
six hoagie buns
Butter or margarine
1. In a large skillet sauté chicken in olive oil on medium heat. Once chicken is cooked through add blackening seasoning and the drained diced chilies to chicken. Salt and pepper to taste and set to low.
2. While chicken is on low, now is a great time to toast your hoagie buns in another skillet. Cut hoagie lengthwise and Just spread on the butter on both of the insides. Place buttered sides down to toast on medium heat for about 2 to 4 minutes each. The toasted buttered buns make a huge difference in this sandwich so don’t skip it!
3. Serve it hot by adding your swiss cheese and chicken mixture to the bun and eat up!
