I love no bake cheesecake even more than I love cheesecake, not just because there is no oven involved but I just prefer the taste. With all these strawberries coming into season and with the weather warming up this couldn’t be more perfect. My family and I couldn’t stop eating this it was so good. The combo of fresh strawberries, cream cheese, and Oreos is a match made in strawberry heaven!
Strawberry Oreo No-bake Cheesecake
(Serves 12-15)
Need:
1 pkg. of Oreos
1/4 c. of melted butter or margarine
1 8 oz pkg. of cream cheese (room temperature)
1 tub of whip cream de-frosted
1/2 c. of powdered sugar
Strawberry topping:
2 lbs. of fresh strawberries
1Tbs of cornstarch
1/4 c. granulated sugar
1/4 c. of water
1. For the topping heat small sauce pan on medium high, stir in cornstarch granulated sugar and water.
2.While mixture is heating up, blend or mash up about a cup of strawberries and add to saucepan. Bring to a boil and then let simmer for about five minutes. Remove from heat and refrigerate for 30-45 minutes.
3. To make the Oreo crust, finely blend up the package of Oreos. Once Oreos have been blended add the melted butter and mix thoroughly. Press Oreo mixture evenly onto large rectangular dish to make crust.
4. In a large bowl add cream cheese, whip cream and powdered sugar. Mix well. Spread cream cheese mixture layer onto oreo crust. Let set in refrigerator for 45-60 minutes. Add strawberry topping when ready to serve.
