This Cheesy Green Chilies & Lime Rice Bake is a super simple meal to make for the family and guest for dinner. Its loaded with zesty fresh flavors and very filling. It has all the food groups in it and makes a complete meal or add tortilla chips for a side.
Just cook the rice and chicken ahead of time then basically mix all the ingredients together, spoon it into a baking dish and top with cheese. Twenty minutes later you have a cheesy gooey casserole. This would even make a great freezer meal, to make and cook another time.
Ingredients
- 3 pieces Chicken Breast -Cooked Cubed
- 4 cups Cooked White Rice
- 8 oz Cream Cheese
- 1 cup Sour Cream
- 12 oz (2 Cans) Green Chilies -Chopped
- 2 Cups Mexican Blend Cheese
- 2 TBS Cilantro
- 2 Whole Limes Fresh Limes – Sliced
- 2 tsp. Mrs. Dash Southwest Chipotle
- 1 tsp. Onion Salt to taste Salt and Pepper
Instructions
- Cook Cubed Chicken Breast in a pan with a little bit of olive oil or pam spray.
- Salt and Pepper Chicken.
- Cook Rice With Directions on the packaging.
- In a large bowl add cooked chicken, cooked rice, cream cheese, sour cream, diced green chilies, cilantro.
- Add The juice from one fresh lime to the bowl. Add seasonings. Mix well.
- Spread mixture evenly in a rectangular baking dish. Top With cheese.
- Bake at 350 for 20 minutes.
