Potato Skins Recipe (Last day of recipe week)

We usually only makes these for special birthday dinners.. they are just sinfully delicious! You cant seem to eat just one. This is a huge crowd pleaser and great for any gathering.

Potato Skins
Prep Time: 20 Minutes
Bake Time: 50 Minutes
Oven: 425 Degrees Fahrenheit
Makes: 12 Servings

Ingredients:
6 Large Baking Potatoes
2 Teaspoons butter/margarine
2/3 Cup Bacon Bits (or any cooked bacon)
1 Cup Shredded Cheddar Cheese
½ Cup Sour Cream

(optional) chopped green onions

1. Scrub potatoes; prick them with a fork. Bake in oven for 40-45 Minutes. Cool.
2. Cut each potato lengthwise into four wedges. Scoop out the inside of each potato wedge. Do whatever you like with the potato pulp.
3. In a small bowl melt butter. Using a pastry brush, brush the insides of the potato wedges with the butter mixture. Place the potato wedges in a single layer on a large baking sheet. Sprinkle the wedges with bacon bits (and chopped green onions) Then top with cheese.
4. Bake about 10 more minutes or until the cheese melts. Serve with Sour Cream for a dip.
