
This is one of my favorite quick meals to cook for my family for a lot of reasons. First its fast and easy with the Instant pot, second its Keto approved, low calorie, dairy free, packed with nutrition and its budget friendly. So many wins! Oh and the most important part is that it taste amazing to!

I fell in love with Curry a few years ago and have been playing around with simplifying curry recipes for a while now. When my husband and I went on a Keto diet earlier this year I wanted to find keto dinner recipes that the whole family would love so I took my favorite easy curry recipe and made it Keto friendly. This has now become a family favorite even if we are not doing Keto.
Ingredients
- 6 skinless boneless chicken thighs
- 2 cups chopped celery
- 2 red peppers chopped
- 1 yellow onion chopped
- 2 TBS coconut oil
- 1/2 TBS of curry seasoning
- 1/2 TBS Turmeric
- 1 tsp. cumin
- 1 TBS Himalayan salt
- 1 tsp. black pepper
- 1 cup chicken broth
- 2 bags frozen steamable cauliflower rice
- green onions (optional)
Instructions
- In an Instant pot place chicken thighs, chopped vegetables, coconut oil and seasonings. Pour chicken broth over raw ingredients in the instant pot. Stir raw ingredients so that the seasonings are coating the vegetables and chicken thoroughly.
- Cook in Instant pot on high presser for 20 minutes. Quick release. Microwave cauliflower rice per the instructions on the package.
- Serve curry over cauliflower rice. Salt and Pepper to taste.
- Sprinkle chopped green onions on top to add a pop of color.
Notes
I use chicken thighs with the bone and skin on, its usually cheaper that way. Then I scoop out the bones and skin after everything is cooked before serving.
