My family and I have loved creating new nutrition rich foods while trying to cut down on the sugar and carbs. I have pre diabetes, hypothyroid disease and my husband has suffered for years with gut problems and the Keto diet has been a wonderful tool to help us manage a lot of these issues. With the Keto diet it can be quite the balancing act to make sure your getting enough vegetables while still keeping your meals low carb, that’s why I created this veggie-ful keto tortilla. Its a great way to get in more veggies and makes for a great delivery method for delicious keto foods.
You can also use this keto flatbread recipe as a sandwich topper, hamburger bun, hotdog bun, pizza crust and so much more. It all depends on how you cut it out of the baking sheet.
Green Keto Flatbread Recipe:
Ingredients
- 1/2 cup of diced cauliflower
- 2 cups baby spinach
- 2 TBS diced green onions
- 1 TBS coconut oil
- 2 cups shredded motzerella
- 1/2 cup parmesan cheese
- 2 eggs
- 1/2 tsp baking powder
Instructions
- preheat oven to 350 f.
- Mix all ingredients in a large blender. Blend till mixture becomes liquid and there are no lumps
- Spread mixture thinly on a baking sheet lined with parchment paper. The flatbread mixture will expand and fluff up when cooking so make it as thin as you can. You can also spread this mixture out into circles and make pizza crust.
- Bake at 350 f. for 15 to 20 minutes or until its starting to brown. Let cool.
Tip: These flatbreads are full of yummy flavor, no need to add extra salt, the cheese has tons of salt already in it so you your flatbread will be plenty seasoned. Its best to eat these fresh or within a few days as they tend to dry out over time and can start to break the older they get. We stored ours in a gallon size baggie in the fridge and just pulled them out for lunch wraps as needed.
