This taste like anything but diet food and has to be my all time favorite meal to eat when Im watching my waist line. Because its so filling and full of flavor. I would even eat this when Im not dieting, its that good! I love finding recipes that my kids will love to eat as well. I think its important to start kids early on eating right. And by the way this salad is huge.
Ingredients
- 1 bag of frozen pre cooked seasoned Fajita steak
- 1 red peper
- 1 green pepper
- 1 yellow onion
- 1 bag of salad
- 8 TBS of fat free sour cream
- 1 cup of salsa
- 1 cup of caffeine free, diet coke/or pepsi
Instructions
- In large sauce pan combine pepper, onion, steak, and diet coke.
- Cook on high, (uncovered) stirring occasionally until coke/juices are reduced into a thicker sauce, about 10-20 minutes.
- Divide Fajita steak mixture in fourths. Add one portion to bed of lettuce. Top with 1/4 cup of salsa and 2 TBS of fat free sour cream.
- (Optional) Add shredded cheese and/or tortilla chip crumbles to top it all off.
