Don’t you just love great low calorie dishes that don’t taste like diet food?! Who doesn’t?!
I found a similar broccoli salad recipe last year that was amazing but was way to overloaded with unnecessary calories and I thought to myself I could make this just as good but so much lighter. And I did! Not only does this recipe cut out more than half the calories but the portion size is huge, enough for a big hearty lunch! Ive even served this up to company and they had no idea it was a light version, they just inhaled it.
Ingredients
- 8 oz mini bow tie pasta (1/2 a package)
- 1 lbs of raw broccoli cut into bite size pieces
- 1/2 red onion diced
- 2 c. red grapes halved
- 4 TBS peppered real bacon bits
- 1/2 c. light mayo
- 6 packages of Splenda
- 1/4 c. red wine vinegar
- 1 tsp. salt
Instructions
- Boil pasta till tender, rinse under cold water to cool down.
- In a large bowl add cooled pasta, cut broccoli, diced red onion, halved grapes and bacon bits. Toss salad gently.
- In a small separate bowl you are going to make the dressing by combining the mayo, Splenda, red wine vinegar and salt. Mix well then mix into salad.
- Let salad chill in fridge for at least 20-30 minutes so the dressing can saturate good than serve.
- Best served on the same day you make it.
