These two recipes together are like a flavor explosion made in heaven! They go so well together that I decided to include both recipes in just this one post. The kids were gobbling it down and the hubby and I wanted to keep eating this dinner past being super full because of the tasty party going on in our mouths!
First up, we have this beloved family favorite Grilled Sprite Chicken. We got this recipe from my Husbands Mother who makes this regularly when she is serving large crowds or whenever we beg her to make this. It’s a huge crowd pleaser! Now I have the recipe jotted down and the hubby won’t have to bug his mom for the recipe every single time we are craving some of mom’s grilled chicken.
What makes this chicken so delicious is the sweet and salty marinade. Don’t skip on the vegetable oil, it seems like a lot but its what makes the chicken so juicy.
Ingredients
- 8 to 10 chicken breast
- Marinade:
- 1 Can of Sprite
- 1 cup of soy sauce
- 2 tsp. seasoning salt
- 1 tsp garlic powder
- 1 cup of Vegetable oil
Instructions
- Cut chicken breast into two to three large strips.
- 2. In a large gallon size ziplock bag or large bowl add all the Marinade ingredients and chicken strips. Seal tight. Let refrigerate and marinade for at least 6 hours. Overnight for best results.
- 3. Grill for 10 to 15 minutes until fully cooked. Serve.
Ingredients
- Pasta Salad:
- One package of Spiral Noodles Cooked as Directed
- 1/2 Red Pepper Chopped
- 1/2 Red Onion Chopped
- 1/2 Package of Pepperoni or Salami
- 1 Can of Corn
- 1/2 Jar Sun Dried Tomatoes In Oil Julienned
- 1/4 Cup of Shredded Parmesan
- 1 1/2 Cup of Feta Cheese or Shredded Sharp Cheddar
- 1 Small Can of Sliced Olives
- Mediterranean Vinaigrette:
- 1/2 Cup Red Wine
- 1/2 Cup Olive Oil
- 1 tsp. Honey Dejon Mustard
- 1 tsp. Minced Garlic
- 1/2 tsp. Onion Powder
- 1 tsp. Italian Seasoning
- 1 tsp. Black Pepper
- Salt to Taste
Instructions
- In large bowl add cooked spiral pasta and all the remaining ingredients. Set aside
- In separate bowl make the vinaigrette. Add all Vinaigrette ingredients stir generouslyuntil all the ingredients dissolve together. Vinaigrette is best made the day before for optimal flavor and texture.
- Add Vinaigrette to pasta salad. Serve cold.
